Cooking Certificate

During each two-hour meeting of the Cooking Certificate class, you will work with a partner to prepare a full meal, regardless of whether you are an experienced cook or have never cooked before.  Our cooking class will teach you the skills to make delicious, inexpensive meals from around the world.       

Who can register?

For High School students enrolled in Project Success partner schools. 

Is any of this true about you? 
  • You want to learn how to cook for yourself because you want to help your family or you have plans to leave home 
  • You are interested in practicing your cooking skills in preparation for a career in the food industry 
  • You aren’t much of a cook, but you are looking for something fun to do with your friends on Wednesdays after school 
  • You want to meet and build community with people you’ve never met before 
  • You want to try new foods 

If so, Cooking Certificate is a great fit for you!

Topics covered during a typical trimester:

Knife techniques

rough chop, dice, mince, julienne

Dry and moist heat techniques

sauté, stir fry, pan fry, steam, simmer, boil

Seasoning and understanding basic flavors

saltiness, umami, sweetness, bitterness, acidity, spicy heat

Creation of basic sauces

roux, alfredo, ragu, and various broths and stocks

Commonalities and differences between food preparations around the world

East and West Africa, Vietnam, Japan, United States, Italy, Ecuador, Mexico, and other regions/countries

How to shop for food

How to choose produce that tastes better and is more affordable because it’s in season
